As a veteran Chef of 25 years, I have come to rely on my vast background working in a variety of food businesses. These include Boutique/Large Hotels, Resorts, Country Clubs, Retail/Grocery Operations as well as several types of restaurants including Fine Dining, Gastropubs, Upscale Casual, Pacific Rim/Sushi, Italian, French, Seafood and even a commercial bakery. More recently, I have begun to offer Private Chef services in addition to catering small events and Consulting.

Background

Born and raised in New Orleans, LA, I grew up in not only a city renowned for it's food culture but in a family that was deeply involved in the food business. The Charles Dennery Company sold baking supplies and was famous for it's fudge My grandmother Phyllis Dennery wrote several cookbooks including the "Dining In" series featuring New Orleans and helped to promote the rich culinary culture of our city. My father has been in the food business his entire life selling everything from soda to yeast to fried chicken. It certainly was a natural progression for me to become a Chef. I attended Johnson & Wales University in Charleston, SC(another fantastic food city!) earning not only a Culinary Arts degree but a Bachelor's in Food Service Management as well. 

After school, I moved to San Diego, CA for almost 10 years. Living in Southern California brought an entire new appreciation of many new food cultures including Asian/Pacific Rim, Latino and Middle Eastern cuisines. Seasonality and the abundance of produce California provides would soon shape my style and food ethos into what I refer to as "globally inspired, locally sourced" cuisine. 

After residing in Central New Jersey for some time, I have cultivated relationships with several purveyors and farmers from across the Mid-Atlantic region to help you with all of your needs from local produce and meats to linen, china, fine Japanese knives and custom wood pieces.
